Comfort Food - Caramelized Onion and Prosciutto Mac and Cheese
I chose to make this favorite comfort food with cauliflower instead of pasta as it drastically lowers the carb count. If you are looking for a dish that is slightly more like the "real thing", simply use a box of Dreamfields low carb pasta in place of the cauliflower. Cook the pasta per the instructions on the package and just substitute it into the recipe for the cauliflower. Enjoy!!
I was feeling lazy and didn't want to run to the store for extra ingredients so I used jarred Alfredo sauce. You can make your own very easily by simply browning butter and garlic, adding heavy cream, reduce to low and let simmer, add Parmesan cheese and a little black pepper. Then add all the other cheeses in the recipe to this sauce.

Ingredients
1 Medium head of Cauliflower OR (1 box of Dreamfields low carb pasta) You can find it here - Dreamfields Low-Digestible Pasta
1 Cup Diced Onion
A few Sprigs of Fresh Flat Leaf Parsley
1/4 Cup Grated Parmesan Cheese
1/4 Cup Goat Cheese
1 Cup Sharp Cheddar Cheese
2 Tbs Butter
6 Large Slices of Prosciutto - Diced
1 Cup Alfredo Sauce (I used Classico Garlic Alfredo)
2 Tbs Minced Garlic
(2 Tbs. Peace and Love)
Directions
Steam cauliflower whole in about 1 inch of water, in a covered pot - Until tender - About 15 Minutes
Saute diced onions in 2 Tbs of butter until they have a nice caramel color - set aside
At the same time, saute diced prosciutto until it is nice and crispy - set aside
Preheat oven to 350*
In a medium sauce pan, add alfredo sauce, garlic, parmesan, goat cheese, and sharp cheddar, and a little black pepper. Stir continuously over medium heat until all the cheese is melted and all ingredients are well blended together. Reduce heat to low
When the cauliflower is nice and tender, drain all remaining water and place the cauliflower back in the same pot. The heat from the pot will help dry out excess moisture in the cauliflower. THIS IS IMPORTANT*** Otherwise, this recipe might be called Mac and Cheese soup!
Place whole head of cauliflower in a glass baking dish. (I used an 8 X 8 inch dish)
Used a fork to slightly the mash the cauliflower and break it all apart.
Pour the cheese sauce evenly over the top of the cauliflower
Layer Caramelized onions on top of the sauce
Layer crispy prosciutto on top of the onions
Sprinkle any left over cheese on top of the entire dish
Bake on 350* for 15 minutes
Sprinkle some chopped flat leaf parsley over the top as a garnish
SERVE AND ENJOY!!
If made into 6 servings - 7.5 grams of net carbs per serving
If made into 4 servings - 11 grams of net carbs per serving

ReplyDeleteI think it would freeze just fine. However, I would recommend re-heating it in the oven.

ReplyDeleteoh this sounds great! i think i'll use bacon tho, since i have a hard time finding prosciutto that I can afford. Is there a print button on here somewhere that I'm missing?

ReplyDeleteI used bacon (the store was out of prosciutto!) and Dreamfields pasta. It was quite tasty, though next time I think I'll mix the pasta with the cheese mix before I put it into the pan, because some of the bottom pasta didn't get hit with sauce. Nice sized portions, even if you make make 6 servings out of it.
ReplyDeleteThis is the second recipe of yours that I have tried! Great! and you allow some room for substitutions! You really need to publish these. This is my second day on low carb. I'm having to decrease carbs slowly. This lunch kept me full. thanks for your excellent recipes!
