Chicken Bacon Crock Pot Chowder


Chicken Bacon Crock Pot Chowder
This chowder turned out deliciously rich and flavorful.  I couldn't have been happier with how it turned out.  Enjoy!

INGREDIENTS
1 lb. Boneless, Skinless Chicken Breasts
1 lb. Bacon
8 oz. Cream Cheese
1 Cup Heavy Cream
2 Cups Chicken Stock - Divided
4 Tbs. Butter - Divided
4 Cloves Garlic
1 Shallot
1 Leek
2 Ribs Celery
6 oz. Mushrooms - (I used Creminis)
1/2 Large Onion
A Few Sprigs Italian Flat Leaf Parsley
1 tsp. Salt
1 tsp. Pepper
1 tsp. Garlic Powder
1 tsp. Thyme
(2 Tbs. Peace and Love)

DIRECTIONS
Turn crock pot on low setting

Chop all of your veggies.  Add the veggies, 2 Tbs. butter, 1 cup of chicken stock, a pinch of S&P to the crock pot, cover and allow the vegetables to sweat for about an hour

Chop up your bacon and cook it until it is nice and crispy - Set aside

At the same time, pan sear your chicken breasts in the remaining 2 Tbs of butter until they are a nice caramel brown color on both sides (They will not be fully cooked at this stage)

Remove the chicken from pan.  Cut into cubes.  De-glaze the chicken pan with the remaining 1 cup of chicken stock. 

Add the chicken stock, heavy cream, cream cheese and seasonings to the crock pot.  Stir until well combined.  

Add the chicken and the bacon to the crock pot.  Cover and let cook for 6-8 hours.  SERVE AND ENJOY!!

    BRAVO BRAVO BRAVO!!! On the recipe, all I had to do was look at the pics!!! Where's the bread & Butter I know it's Low Carb, but you just have to make an exception!Ha Ha! Either way, awesome recipe. I'll definitely spread the word!

  4. This was delicious! I made it today because I had the day off and had the extra time in the morning to do the chopping & early prep work. Do you think it would be ok if next time I did the chopping, the 1 hour of sweating the vegies and browned the chicken the night before? I don't usually have extra time in the morning before work.

  7. I made this a few days ago, planning to have some leftovers for lunch. It was so popular that it was all gone in one night. It was really delicious and easy to make. I will definitely be making it again.

  15. I've been eying this recipe for awhile now...it's a beautiful fall day. Perfect for chowder! I am working from home today, so it's a great day to try it! I was able to get it all done and in the crock pot. I don't like mushrooms and I don't have shallots or leaks on hand. So hopefully it'll be ok. It smells FABULOUS! I can't wait to try it this evening!!!

  17. This is simmering away as we speak. It smells AMAZING. My only question, which may seem silly, is the cook temp. Should this simmer on low the entire time? I assume yes, but wanted to be sure. Thank you so much for this awesome recipe!

  18. I just made this last night and it was fantastic! I didn't have the majority of the vegetables but I just used sweet peppers and extra celery for it. Keep up the wonderful work!
