Spicy Sausage Breakfast Taquitos
These taquitos are easy to make and
simulate their full-carb counterparts quite nicely. You can make them
with any of your favorite low-carb meats, vegetables or cheeses. These
taquitos are delicious served with sour cream and salsa on the side.
INGREDIENTS
4 Tbs. Butter – Divided
1/3 Cup Yellow Bell Peppers - Chopped
1/4 Cup Onion - Chopped
3 Baby Bella Mushrooms - Chopped
8 oz. Hot Italian Breakfast Sausage
6 Large Eggs
¼ Cup Salsa
4 Large Low Carb Tortillas

1 Cup Sharp White Cheddar Cheese - Shredded
½ tsp. Onion Salt
½ tsp. Italian Seasoning
(2 Tbs. Peace and Love)
DIRECTIONS
Preheat oven to 400° Lightly oil or butter a baking sheet.
In a large sauté pan over medium heat, add 2 Tbs. butter, peppers,
onion, mushrooms, and salt and pepper, to taste. Saute until tender.
In a separate pan, over medium heat, brown the sausage. Once the sausage is cooked all the way
through, drain excess grease, and combine with vegetables.
In a large mixing bowl, combine eggs and salsa, and fork whisk.
Add egg mixture to the meat/vegetable mixture and cook until the
eggs are scrambled.
Lay the tortillas flat and put a layer of cheese down the center
of each one. Next, layer 1/4 of the scramble mixture down the center of each
one. Top each one with another layer of cheese.
Roll tortillas tightly, packing the ends with any extra scramble
mixture. Place on baking sheet, fold
side down.
Melt remaining 2 Tbs. of butter and brush on top of the rolled
tortillas. Combine onion salt and
Italian seasoning and sprinkle the top of each tortilla.
Bake on the top rack 10-12 minutes. Flip each roll over,
give another light brushing of melted butter and cook for 10-12 minutes more or
until nice and crispy on both sides.
Allow to cool and cut each one in half before serving.

ReplyDeleteI don't understand why the right click is not allowed. Furthermore, I wasted 16 pages and ink just to print the recipe. I am not interested every single thing on the page with all the pictures and everyone's comment. Now, i don't even want to use the recipe.
ReplyDeleteIt is disabled because people were stealing my content and posting it as their own. A lot of blogs do not even offer a print option at all so I met in the middle and at least allowed the print option. As far as printing 16 pages, there are several printing option that allow you to remove images, side bar content etc. I could walk you through this whole process but I am not running a tech support blog. I am sorry this was such a complete and total inconvenience for you that you now do not want to use my recipe. Have a great day!

ReplyDelete@dehest - next time either print to file on your computer or look at print preview and only print the pages you want. Or cut and paste then print. If that is too technologically advanced for you then you could take a pen to a piece of paper and WRITE out the recipe!!!
