Almond Joy Fruit and Nut Bars



ALMOND JOY FRUIT AND NUT BARS
(COPYCAT LARABARS)
I recently tasted a Larabar for the first time.  I couldn’t believe that something with so few ingredients could taste so good.  My next thought was “I can totally make these myself”, and that I did, in several versions.  This was the first one I tried.


INGREDIENTS
1 Cup Almonds
1 Cup Deglet Noor Dates – Pitted and Chopped
¼ Cup Unsweetened Coconut – Shredded

(2 Tbs. Peace and Love)

DIRECTIONS
Grind almonds in food processor until they are finely chopped.  Add dates, coconut, and cocoa powder. Pulse until all ingredients are combined and evenly sized.

Pour mixture between two sheets of plastic wrap.  Use your hands to press and form the mixture into a compact rectangular shape.  Wrap the plastic wrap around it and refrigerate for 1 hour.  This will allow it to firm up and make it easier to cut into bars.

Remove from fridge and cut into 8 bars.  I individually wrap the bars in plastic wrap and store them in the fridge.

Cook Time – 0 Minutes

Makes Servings: 8 Bars
Per Serving: 
Calories – 162
Protein –4 g
Carbs –17 net g
Fat –9 g

***To lower the carb count, you can cut these into bite size snack pieces and just have a couple when you are craving something sweet instead of eating a whole bar.  ***

  5. I tried making these tonight. They taste amazing, but didn't stick together. Any thoughts on what I might be doing wrong?

    1. Maybe add just a few more dates in. Also, it does take some time to form them. You want to make sure you get it nice and compact. Also, maybe leave it in the fridge a little longer before slicing.
