
PUMPKIN PIE FRUIT AND NUT BARS
(COPYCAT LARABARS)
I have been having such a fun time coming up with different flavored fruit and nut bars. They have been a great pre-workout snack for me.
INGREDIENTS
½ Cup Raw Cashews
½ Cup Raw Pepitas
1 Cup Deglet Noor Dates – Pitted and Chopped
½ Cup Dried Apricots
2 Tbs. Pumpkin Pie Spice
(2 Tbs. Peace and Love)
½ Cup Raw Cashews

2 Tbs. Pumpkin Pie Spice

DIRECTIONS
Grind cashews and pepitas in food processor until they are finely chopped. Add dates, apricots, and pumpkin pie spice. Pulse until all ingredients are combined and evenly sized.
Pour mixture between two sheets of plastic wrap. Use your hands to press and form the mixture into a compact rectangular shape. Wrap the plastic wrap around it and refrigerate for 1 hour. This will allow it to firm up and make it easier to cut into bars.
Remove from fridge and cut into 10 bars. I individually wrap the bars in plastic wrap and store them in the fridge.

Cook Time – 0 Minutes
Makes Servings: 10 Bars

Protein – 3.5 g
Carbs – 18 net g
Fat – 5.6 g
***To lower the carb count, you can cut these into bite size snack pieces and just have a couple when you are craving something sweet instead of eating a whole bar. ***

I'm not creative @ ALL when it comes to cooking. Do you think there could be a different dried fruit that would work besides apricots? I just can't stand them for some reason. LOVE the dates though!
ReplyDeleteHonestly you can't even taste them. You could probably get away with just omitting them and not even adding a substitution.
