About Me

My name is Kyndra Holley.  I live just outside of Seattle, Wa.  I have lost nearly 60 pounds through a low carb/primal diet and regular exercise.  I am currently studying to become a Certified Personal Trainer through the National Academy of Sports Medicine.  Blogging allows me to combine several passions in one little tiny corner of cyberspace... Cooking, fitness, writing, photography. I am a firm believer in the weight loss potential and health benefits of a low carb way of life. I have used my many years in the restaurant industry and my passion for cooking to create an ever changing menu for myself, as well as for you. Many say that "Variety is the spice of life" I say variety is the key to staying on plan. I hope you enjoy what you see here and benefit from it... Peace, Love, and Low Carb

This was me at my heaviest and some stops along the way.  I will always be a work in progress

My amazing husband has been with me every step of the way and has loved me and made me feel beautiful at any size.  Without his love and support, none of this would be possible.  I love you Jon Holley!

Here are some random facts about me:

1. I love most things made from tomatoes but do not like just plain raw tomatoes. They gross me out.

2. I took a year of sign language classes because I wanted to communicate with the deaf clientele that were regulars at a restaurant I worked at.

3. If I could do anything other than what I am already doing, I would buy a nice piece of property and run a dog rescue in an attempt to save all the dogs in the world. (I know that is not possible but boy would I like to try) I may do this one day regardless.

4. I am obsessed with my dog Jack. I prefer him over nearly all humans and I wish I had 100 little Jacks running around.

5. I am a complete and utter Star Wars nerd and still get excited when any random sitcom makes a Star Wars reference.

6. If I had any free time these days, I would probably fill it by playing Xbox. I am/was a gamer chick. My favorite games ever are the whole Assassins Creed franchise and Bioshock.

7.  I love all things skulls.  I always have and always will.  I have so many pairs of skull earrings that I could wear a different pair every day for two weeks.  My favorite place to get decorative skulls to add to my collection is New Orleans.

8.  I am finally at a point in my life where I crave working out.  If I miss too many days consecutively, it really messes with my emotional health and I am no fun to be around.  Exercise is free medicine.

9.  For most of my life I wanted to be a writer but I have horrible grammar and syntax.  I have folders and folders of things that I have written than no one has ever seen.

10.  I prefer vegetables to fruit.  I could eat oven roasted vegetable all day, every day.

  6. My husband and I started eating low-carb a few weeks ago. We're each down about 10 lbs., but I've been struggling to find meals which look rich and satisfying. I stumbled onto you through Pintrest, and WOW! I think my next week's menu planner is 95% your recipes. I'm eager to get your cookbook too. Thanks so much for sharing your gift with food! :)
